Breakfast Idea (As you like it breakfast casserole)

Hey gorgeous, trust you are fine! I’m fine over here, thanks for asking…lol.

Busy with the world premiere and screenings of my movie here in Toronto at the Toronto International Film Festival. I honestly can’t wait for y’all to watch this one! It will have you clutching your stomach in laughter!

Anyway, if your family’s like mine, you’ll always have to come up with new meals. If my kids eat any type of meal more than once a week, they start complaining that they eat that meal all the time. One of their complains is usually, we have cereal everyday! So I have to come up with different breakfast ideas. Constantly checking online for meal ideas. I came across this casserole many years ago and it’s been a hit back to back with my family! Everyone loves it!

It’s a casserole that allows you put pretty much whatever you want or whatever you have available in it. The must haves are milk (of course Nunu), eggs, cheese and bread. Everything else is optional. Here’s what I put in mine…

The ingredient proportions are estimates. The more eggs, the firmer, and less likely to deflate, the casserole will be.

Sausage should be browned and cooked through first. You can also uses spices such as curry and thyme or a spice mix.

INGREDIENTS

6-10 eggs

2-3 cups grated cheddar cheese

6 slices bread, cut into cubes. I usually put more bread

2 cups milk (mix about 5 heaped tablespoons of Nunu powder into 2 cups of water)

Salt  and Pepper to taste.

Additions:

1 cup corn (cooked or frozen)

1/2 cup chopped cooked minced meat.

1/4 cup sliced green onions

I cup cooked shredded chicken

1 cup cubed cooked sausage

A few slices cooked bacon (I use turkey bacon) chopped

1 teaspoon herbes de provence, or other dried herbs, or a Tbsp of fresh chopped herbs such as basil, rosemary, or thyme

13 x 9 inch casserole dish

METHOD:

Preheat oven to 350°F. Beat the eggs in a large bowl. Mix in the milk and cheese. Add the bread and carefully stir until all pieces of bread are moistened (don’t over mix or the bread may disintegrate). Add additions. Add salt and pepper to taste (if using Italian sausage, you won’t need either.) Butter a 13 x 9 inch casserole dish. Pour mix into casserole dish (you can use a square baking pan if you don’t have a casserole dish) 2 Bake in oven for 50 minutes to an hour, until the top is browned and the center springs back when touched. Remove from oven and let cool for 10 minutes before serving. Slice it up and serve.

It’s a complete breakfast all in one! Yum! It’s much much easier to prepare than it sounds and you really can add whatever you want. So whatever meats and veggies you have are fine. I also change it from time to time. Sometimes I add finely chopped carrots, finely chopped green pepper or peas. Try it, play around with it and let me know how it comes out!

  5. Have you ever made a breakfast casserole? The basic ingredients are eggs, cheese, milk, and bread. It s the easiest thing in the world to put together. We have a sausage breakfast casserole on the site that is one of my favorites.
